The Art of Tapping Palm Sap

The journey to create our premium palm sugar from Sumatra begins with carefully selecting mature palm trees, aged 10-20 years and with a trunk diameter of 30-50 cm. The process includes:

  1. Flower Tapping: The male flower stalks are trimmed early in the morning.
  2. Sap Extraction: Bamboo or plastic pipes are attached to the cut stalks to collect fresh sap.
  3. Sap Filtration: The collected sap is filtered immediately to remove impurities.

This meticulous method preserves the natural sweetness and purity of the sap, setting the foundation for high-quality palm sugar production.


From Sap to Solid Palm Sugar

The collected sap undergoes a traditional yet efficient process to become solid palm sugar:

  1. Heating: The sap is boiled to 100°C.
  2. Neutralizing Acidity: A small amount of slaked lime is added to balance acidity.
  3. Stirring: The mixture is stirred until it crystallizes into solid sugar.
  4. Straining: Impurities are removed through fine filtration.
  5. Drying: Excess moisture is evaporated until the sugar reaches a moisture content of 10%.
  6. Molding: The sugar is molded into traditional shapes, such as round, oval, or rectangular blocks.


Transforming Solid Palm Sugar into Granulated Sugar

For export markets that require granulated palm sugar, the solid blocks are further refined:

  1. Breaking: Solid palm sugar is crushed into smaller granules.
  2. Grinding: The granules are ground into a fine powder.
  3. Drying: The powder is oven-dried to achieve a moisture level below 2%.
  4. Packaging: The final product is sealed in airtight packaging to preserve freshness and quality.
